This year we teamed up with our friends at Clayton Hops again to produce a unique farm fresh pilsner. Juicy 100% Riwaka cones were harvested from Blue Rock Hop Farm, which is named after the "blue" rock cliff formation that overlooks the farm. A maximum dose of cones in our hop back, once on the hot and again on the cold side to ensures tasty and refreshing juiciness for all to enjoy.

Usually we only get to brew a beer like this once a year, but lucky for you this time we have made two!!

Volume 1 is a Hazy IPA loaded up with Oats and Wheat and fermented with our expressive English ale yeast. Showcasing freshly harvested “wet” Nelson Sauvin hops from our friends at Freestyle Hop Farms. Softy and juicy with a potent concoction of Grapefruit, White Wine and Sticky Green fresh hop goodness. Make sure you try alongside Volume 2 NZIPA.

Harvest is over and the strings that held the hop bines are down. It’s an exciting time for our brewers, a chance to sample and select the best lots of our favourite New Zealand hop varieties. Here in String Theory, the finest, freshest lots of Motueka, Riwaka, Nelson Sauvin and Rakau from Freestyle’s Sunrise Valley farm are combined in a smooth base of plump barley malt and oats to create a beer showcasing the pick of the crop - no strings attached.

The Green Limousine delivers fresh Nelson Sauvin hops to us once a year. Coming from our hop gardens just down the road, they're as fresh as it gets. In fact, they're off the bine and into the brew in as quick as thirty minutes.

This year, we’ve dialled up the freshness, using only hops from our 2023 harvest. With Nelson Sauvin, Taiheke & Southern Cross hops freshly harvested, dried and pelletised, the aroma and flavour stays intact throughout the entire brew. And, of course, it’s also fresh-hopped with Nelson Sauvin.

The result is this beautiful golden brew. Super fresh and super delicious.

Drag racing’s renegades are revived. In it to spin it, they burn out for bragging rights, throwing holy smoke, then floor it ASAP backwards. Tanks are slapped, walls are tagged, lanes are crossed and spectators get an old fashioned spectacle. This bunch was absolutely born to be.

Packing big blocks and beasty feet into factory cars is a recipe for volatility. So is brewing with fresh hop cones from an experimental hop variety for the first time. The late-flowering NZ101 hop brings delicious risk to the mix, bouncing off Moutere and Rakau to deliver a wild, fruity, resinous ride.

This 4.5% Pilsner is lightly hopped with freshly picked Nelson Sauvin from Wayward Hops in Tarata, Taranaki, grown by our friends, Tim and Maggie Verry at their Oapui Road farm.

We decided to brew a lighter beer style with these fresh hops to showcase the delicate nuances of these locally grown hops. The beer itself is a crisp and sessionable lager with a rounded character of gooseberry and passionfruit over a lean malt base.

The annual hop harvest is always an exciting time for brewers and beer lovers - and when NZ Hops Ltd announced the official launch of Superdelic™ (previously Trial Hop NZH-102), the hype reached a new level.

Superdelic™ packs juicy berry and tropical fruit flavours and aromas, as well as tangy citrus and delectably sweet, candy-like characteristics. As one of only a few fortunate enough to brew with this new varietal, we’re letting the full flavour shine by only using 100% fresh Superdelic™ hops, harvested from the bine just before brewing. Rest assured, this Fresh Hop Pale Ale really is something Super!

Gondwana Green is an exploration of what the land has best to offer, an attempt to celebrate hops in their natural form. It’s a once-a-year experience to enjoy the more organic, earthy and lush nature of what fresh hops bring to beer.

The mouthfeel is oily and resinous while there is a pleasing grassy/ vegetal tannic note, soft and smooth – just like that fresh mint tea. It’s a synaesthetic experience that gives you the chance to finally taste the colour Green.

Fresh Hop Nelson Sauvin Cold IPA

Fresh Hops: Nelson Sauvin

This year we chose Cold IPA as the beer style to best showcase fresh Nelson Sauvin hops. For a unique twist on the cold IPA style we added champagne yeast during late stage fermentation to create a beer with an extra dry finish.

We start the fermentation with a lager yeast, fermented at a slightly higher temperature than usual for a lager yeast. This minimises the presence of fruity esters more typical of IPAs and produces a crisp, clean IPA with the hops being centre stage and dominant through the palate. During late fermentation we added champagne yeast to finish the fermentation. Nelson Sauvin hops are known for having low cohumulone levels which create a beer that drinks with a smooth bitterness.

Fresh Hop Riwaka Dip Hopped Hazy IPA

Style: Hazy IPA

Fresh Hops: Riwaka

For this beer we chose to showcase another iconic New Zealand Hop by using fresh Riwaka hops in a Hazy IPA using the dip hopped brewing method. Dip hopping differs from traditional hopping techniques whereby the fresh hops and hot water are added to a separate fermenter and left to steep to produce a hoppy tea like solution, that is then added to the fermenter with the wort prior to the traditional fermentation process. The benefit of using this technique is it accentuates the flavours and aromas contributed by the hops without adding astringency or harsh bitterness.

For our 2023 Fresh Hop release we've packed our brewery full of Fresh Nectaron® hops from NZ Hops. A newcomer to the hop world, Nectaron® bring loads of peach, nectarine, pineapple and papaya. A fine white head tops a beautiful thick hazy orange.
